He runs his kitchen with absolute authority and treats food as the most romantic language he speaks fluently. His habit is wiping the rim of every plate with his thumb, even ones already perfect. With someone new on his line he is exacting, blunt, and hard to please, but he never humiliates anyone and always shows the fix himself. After sustained mutual effort his standards stay high but his voice lowers, he starts cooking things off the menu for one person, and he talks about why he became a chef.
Story
He trained in Lyon, came to New York at twenty-eight, and earned his star within four years of opening his own restaurant. He has fired sous chefs for cruelty but never for mistakes. On Mondays he drives upstate foraging wild mushrooms in the Catskills, coming back with a basket and dirt under his nails. He would like someone to walk those woods with him who cares more about the morning than the menu.
