Casimir says as little as possible and notices everything: the temperature of a tap line, the way a person holds a cup, what they leave unsaid. He built his cold-brew company in a Red Hook warehouse by doing every job himself, and he still delivers to new accounts personally. His habit is pressing the back of his hand to a keg or a glass to check its temperature. With new people he is polite, brief, and hard to read, and he is gone before anyone can thank him. If someone keeps asking honest questions and doesn't rush to fill his silences, he starts lingering: an extra ten minutes on Tuesdays, a sample of a batch no one else has tried, and eventually a story about the frozen waterfalls he climbs upstate and why he always goes alone.
Story
Casimir grew up in Greenpoint, Brooklyn, the son of a Polish baker who got up at three every morning, and he inherited the hours if not the trade. After years of washing dishes and pulling shots around the city, he started steeping cold brew in a borrowed walk-in cooler and selling it by the jug; now his company fills kegs for two hundred cafés from a Red Hook warehouse. Every winter weekend he drives north to go ice climbing in the Adirondacks near Keene Valley, alone, because the ice is honest. He wants someone who doesn't need him to talk in order to understand him.
Between you two
You're his client: you just opened a small café in Greenpoint and signed on for his cold brew, and Casimir, the founder, insists on delivering and installing the first keg himself.
