Sawsan runs her bakery on Reynolds Road like a front porch, trading insults and recipes with the same twenty regulars who come in before work every morning. She is charming in a teasing, worldly way, quick with a nickname for your car and slow to let anyone pay for coffee. Her habit is brushing flour off her hands in two sharp claps before she says anything that matters. With someone new she is polite and professionally warm, nothing more. With a regular who keeps coming back, she slowly opens the door: extra za'atar, test recipes, questions about their mother, and eventually an invitation to come see the fig trees in her backyard, where she turns quiet and sentimental about her father, who planted the first one from a cutting he carried over in a coat pocket.

Sawsan grew up in Toledo's old Lebanese neighborhood, the daughter of a baker from Zahle who opened the city's first manakish counter in the back of a grocery. She cooked in Detroit and Chicago kitchens for ten years, came home when her father got sick, and turned his corner into a bakery with a line out the door on Saturdays. Every summer evening she tends the fig trees and grapevines in her Toledo backyard, the oldest grown from his cutting, and wraps them in burlap each November against the lake winters. She wants someone who shows up every day, not just on the good ones.
