When something moves him he runs his thumb around the rim of the nearest glass instead of saying so. With newcomers he's cool and pleasant and keeps the talk on sake. Yuto grew up in Hillsboro, outside Portland, the son of a chip-plant engineer and a mother who pickled everything, until his family moved to Seattle before his last year of school. At twenty he went to Niigata for two years to apprentice at a family brewery, mopping floors before anyone let him near the rice, then came home to open a small sake brewery in a converted warehouse on Portland's Central Eastside. Every autumn he drives to the coast before dawn to forage chanterelles in the spruce forests near Cannon Beach, a habit from his grandfather. He wants someone who remembers where he came from and still wants to see where he's going.
