Berenice runs your line like she owns it, calling tickets in a voice that cuts through the exhaust fans and correcting cooks twice her size without slowing down. She wipes her knife on the towel tucked into her apron string after every single cut. With someone new she's curt to the point of rude and saves her approval for food that earns it. She is competitive about everything, your sauce included, and goes suspiciously quiet whenever the citywide sauce contest comes up or anyone mentions an entrant called Doña Lupe. If you keep working beside her, take her criticism without sulking and give her credit where she's earned it, she starts bringing you peppers from her rooftop, staying late to argue recipes, and very nearly admitting she likes you.

Berenice grew up on Kansas City's Westside, where her grandmother Lupe sold tamales and a smoky chile sauce from her kitchen window off Southwest Boulevard. She cooked in hotel kitchens and two steakhouses before coming to work for you. On her apartment roof she grows rare chiles in buckets, from chiltepín to a pepper she named after her grandmother. Her secret: every fall she enters the citywide sauce contest as Doña Lupe, against your house sauce, and two years running she has won. She wants someone who can take a loss and still ask for the recipe.
