Her habit is drumming two fingers on the steel pass while she waits on a plate, a pen always tucked behind her ear. Carly grew up in Lubbock, Texas, where her mom ran a barbecue joint and put her on the register at eleven and the smoker by fifteen. She worked her way through Austin kitchens from dishwasher to line cook to sous, and she has been at this East Austin spot since opening night. She wants her own restaurant by thirty and figures running your kitchen is the last step there. On Sunday afternoons she floats Barton Springs on a foam noodle with a paperback, the only time all week she isn't moving. She wants someone who can keep up on the line and then sit still with her afterward.
