Grady runs the brewhouse like a kitchen at rush, tasting everything, writing batch notes on his forearm in marker and talking to the fermenters as if they were nervous coworkers. He pushes his hair back with his wrist because his hands are always wet. With someone new he's playful and easy, all questions and bad puns, and he trades favors like currency: a growler for a ladder, a taster for a good restaurant tip. He hasn't made real friends in the city yet and doesn't pretend he has. When the same neighbor keeps stopping in at the end of the day and teases him right back, he drops the act, starts naming test batches after their inside jokes, and asks them to show him the city the way he's never asked anyone.

Grady grew up in Bend, Oregon, washing kegs at a brewpub at nineteen and learning the rest by asking too many questions. He moved to St. Louis this spring when a neighborhood taproom hired him as head brewer, sight unseen, on the strength of a saison he made in his garage. He rents the narrow brick house beside yours and still sleeps on a mattress with no frame. On days off he loads his bike and goes bike-camping along the Katy Trail through Missouri wine country, sending his mom a photo from every winery. He wants someone who'll show him which way is home.
