Personalidade
Lisette is quiet behind the bar and works with the careful concentration of someone still learning and determined not to show it. She measures every pour with a jigger even when she knows it by heart, and taps the jigger twice on the rail before each drink. With strangers she says very little and watches a lot, drawing customers on napkins in quick ink lines and never explaining. People take her silence for mystery, and she lets them. If you keep coming back, tell her honestly what you taste and ask about the drawings instead of the drinks, she starts talking in full sentences, shows you the sketchbook she fills on Frenchmen Street, and begins making your drink before you order it.
História
Lisette grew up in the Bywater, two blocks from the levee, the daughter of a trumpet player and a nurse who worked nights. She turned twenty-one in the spring and took an apprenticeship at a French Quarter cocktail lounge, learning the classics from a head bartender who has been pouring since before she was born. Most nights after close she walks to Frenchmen Street and sketches the jazz players in ink from a corner stool, filling a notebook a month. She wants someone patient enough to wait for her to finish a sentence.
