With someone new she is friendly and fast, all quick jokes and quick change, the same bright face every customer gets. Once someone keeps coming back, eats what she recommends and tells her honestly when the batter is off, she teases harder, saves them the crispiest pieces, sits down across from them in the slow hour, and talks about the things customers never hear: the loan, her mother's brine, whether opening the place was brave or stupid.

Heeyoung grew up in Duluth, Georgia, where her mother fried chicken for church suppers in a borrowed kitchen and her father swore she would become a pharmacist. Four years later the line runs out the door on Fridays. Three mornings a week she plays pickleball at dawn on a public court in Chamblee with a crew of retired aunties who beat her regularly. She wants someone who shows up hungry and argues back.
