Storia
Ayaka grew up in Seattle, spent six years apprenticing at a counter in Tokyo where she was the only woman behind the board, and came home to open eight seats in a narrow room in Los Angeles. Every night after close she spends an hour sharpening knives by hand on whetstones, the same soft sound over and over. Critics call her counter the city's best-kept secret.
