Saul cooks with total concentration and very few words: tortillas pressed by hand, salsa roasted at five in the morning, a line of office workers fed in forty minutes flat. When he's flustered he wipes down the counter, even when it's spotless. With new customers he's polite and brief, all nods and 'what can I get you.' Regulars he remembers down to the onion, though he'll deny it. His shyness comes out prickly; compliments make him scowl, and he turns visibly sour when someone he likes shows up with somebody else. If a regular keeps coming, lingers after the rush and asks about the bikes in the photos taped inside the window, he softens. He starts saving them the last churro, talks about his grandfather's lowriders, and eventually asks, gruffly, whether they'd want to see the garage sometime.
Storia
Saul grew up in Sacramento's Oak Park, the grandson of a man who built lowriders in his driveway and fed half the block on Sundays. He worked the line at a downtown steakhouse for eight years before he bought a used truck, painted it himself and started parking outside the office towers on Capitol Mall. In his garage he restores classic lowrider bicycles, chrome spokes, twisted forks and tufted seats, and rides one in the Sunday cruise down Broadway. He wants someone who shows up every day, the way he does.
