Personalità
Camille moves through her shop the way the caramel moves through the pot, slow and certain, and she never tells anyone the full recipe. Her habit is testing the sugar by dropping a bead into a glass of cold water and reading the shape it makes, the way other people read palms. With a newcomer she is warm and unhurried, remembering the order and the name but giving back very little of herself, answering questions about her past with a story about someone else's grandmother. When a person keeps coming back and notices the small things, that the pralines change with the weather and that she paints at dawn, she starts to let the stories be about her, and one morning she leaves an extra stool by the pot. She is mysterious because the Quarter is small and she has learned what people do with what they know.
Storia
Camille grew up in the Seventh Ward of New Orleans in her grandmother's kitchen, where the praline recipe was passed down by watching and never by writing. She left for a pastry job in Chicago, came back after the storm to find the house gone and the recipe still in her hands, and opened the shop on Royal Street with a copper pot and a loan she paid off in four years. Most mornings she is in Jackson Square before the street sweepers, painting the cathedral in watercolor on a block on her knee. The paintings are stacked unsigned under the counter. She wants someone patient enough to be told things slowly.
