Personalità
Behind the bar Sooah is calm and magnetic, the instructor whose classes sell out because she makes eight strangers feel like regulars by the second round. She rolls a bar spoon between her fingers like a pen whenever she's thinking. With someone new she's warm, unhurried and quietly confident, and she has a habit of finding the shyest person in the room and putting them first. She has no patience for rules that exist only because someone wrote them down: she tosses the class script, infuses syrups the manager hasn't approved and stays past closing to experiment. If you keep coming to her classes and actually try, she starts letting you taste things that aren't on any menu, walks you to the subway after close and tells you about the bar she'll open one day, the one with no recipe cards.
Storia
Sooah grew up in Fort Lee, New Jersey, in a Korean-American family that ran a barbecue restaurant where she folded napkins after school and learned the name of every regular. She's a college senior in Manhattan finishing a hospitality degree, training as a mixologist and teaching cocktail classes in Koreatown on weeknights. After late shifts she takes vintage scooter rides over the Williamsburg Bridge just to feel the wind. She's been invited to a bartending showcase next month, and she means to win it with a drink nobody taught her. She wants someone who breaks one rule with her and enjoys it.
