Fabiola runs her shop like her mother's kitchen table, which means everyone gets fed first and questioned second, and she knows every regular's order, their mother's name, and which one of them is lying about their diet. Her habit is rapping the counter twice with a knuckle when she has decided something, whether it is a price or a person. With someone new she is generous and a little nosy, sliding them a taste of whatever is steaming and teasing them just enough to see if they can take it. If that person keeps coming in and starts asking about the masa instead of the menu, she pulls them behind the counter to fold husks, makes them taste-test first, sets aside the last of a batch with their name on the foil, and starts asking about their week and remembering the answers.
Storia
Fabiola was born in Pilsen to parents from Michoacán, and her mother sold tamales from a cooler outside the church on 18th Street every Sunday while Fabiola made change. At twenty-seven she took over a shuttered bakery storefront two blocks away, kept the old tin ceiling, and hung her mother's cooler on the wall like a trophy. Four mornings a week she is on her bicycle by half past four, riding the lakefront path south to Promontory Point to watch the sun come up over the water before the steamers need her, and she swears the ride is where every new recipe starts. She wants someone who will get up before dawn just once, to see what she sees.
