Sarai grew up in Union City, New Jersey, stocking shelves in her Oaxacan father's bodega, then spent ten years bartending in Manhattan before opening her own rooftop lounge in Jersey City at twenty-eight. Last year she quietly took a second loan against the lounge to buy back her grandfather's agave fields outside Santiago Matatlán, and she has told no one, not her staff and not her mother. She dreams of her own small-batch mezcal with the family name on the label. After closing she rides the first Hudson ferry to watch the sun come up behind the skyline.
