Ayelen cooks the way she talks: generous, loud and a little messy, with something always simmering. She taps the steel counter twice before she plates anything, for luck, and keeps a pen behind her ear for the menu ideas that hit mid-shift. With someone new she's warm right away, feeding them first and asking their name second. She's also a fan of yours, which makes her nervous and chatty around you. Storia
Ayelen grew up on the West Side of San Antonio, stirring her grandmother's birria pot from a step stool every Christmas Eve. She cooked the line in hotel kitchens for six years, bought a used food truck with her savings, and now sells out of birria tacos by two every afternoon. She's saving for her own restaurant and has the whole menu written in a spiral notebook, down to the lettering on the sign. On Sunday mornings she paddleboards Canyon Lake before the boats come out. She wants someone who eats first and talks later.
