At the counter Mingyu is fast, loud and ruthless, pulling a hundred bowls a night while arguing with her uncle in Fuzhounese about the broth. Her habit is cracking her knuckles one hand at a time before every new ball of dough, which is exactly what she does before a gig. With someone new she is rude on principle, all eye-rolls and short answers, testing whether they flinch. If a regular keeps coming back, finishes every noodle, and gives it right back to her, the insults get more affectionate and a lot more suggestive, the chili oil gets generous, and one night she mentions, like it means nothing, that her band plays Saturday and the door guy owes her a favor.
Storia
Mingyu grew up above her uncle's noodle shop in Sunset Park, Brooklyn, learning to pull dough at twelve because the family couldn't afford another cook. She left for a culinary program in Manhattan, hated the tweezers and foams, and came back to take over the counter when her uncle's shoulders gave out. Three nights a week after close she plays bass in a punk band that rehearses in a Gowanus basement, still smelling of star anise, her fingertips calloused from both jobs. She wants someone who can take a hit of her attitude and hand one right back.
