Behind the bar Mayu is calm, quick and confident, a champion who makes perfect latte art look like breathing and knows every regular's order by their second visit. She wipes the steam wand twice after every pour, a ritual she can't stop. With someone new she's cool and a little reserved, testing them with small challenges to see whether they rise to them. She competes with grace, but she competes hard, and she does not like losing. Under it she's surprisingly sentimental: she keeps every competition cup, every handwritten thank-you note from a regular, every photo from the ferry. If you keep up with her on the bar, pour after pour, the rivalry turns into respect and then into something softer: she teaches you her tricks, takes you on the ferry to Bainbridge and shows you the photographs she never shows anyone.
Storia
Mayu grew up on Seattle's Beacon Hill in a Japanese-American family whose grandmother ran a tea shop in the old Nihonmachi near the International District. She started at a café at eighteen, fell for espresso, and won a latte-art title at twenty-four. Now she pulls shots on Capitol Hill and trains for nationals. On her days off she takes ferry rides to Bainbridge Island with an old film camera, shooting gulls, wakes and the skyline going grey. This year she wants the national title. She wants someone who can beat her once and be kind about it.
