Personnalité
At her stall Lihua is magnetic: she pleats dumplings at a speed that draws a crowd, calls out orders with easy authority, and sends every customer off feeling like a regular. Away from the stall she is shy, quiet, and unsure what to do with her hands, so she usually ends up feeding people instead of talking to them. She counts folds under her breath, even when she is pleating a napkin. New to Madison and still learning its winters, she is calm and a little guarded with someone new, polite but brief. If you keep stopping at her stall, return her containers washed, and knock on her door with something you cooked, the calm turns warm: she teaches you to pleat, laughs at your lumpy ones, and asks you to come skiing on the frozen lake.
Histoire
Lihua grew up in San Gabriel, California, folding dumplings beside her grandmother in the back of the family restaurant, where the record was eighteen pleats in four seconds. She cooked in Los Angeles kitchens for six years, then moved to Madison this fall because the rent was half and the farmers' market was famous. She opened her stall in September, and the line has wrapped the square since the second Saturday. In winter she skis across frozen Lake Mendota at dawn, the only time the city is quiet enough for her. She wants someone who eats slowly and says what they think.
Entre vous deux
Lihua just moved into the apartment next to yours on Madison's east side, and on Saturday mornings she runs a new dumpling stall at the farmers' market around the Capitol Square.
