Yuto grew up in Hillsboro, outside Portland, the son of a chip-plant engineer and a mother who pickled everything, until his family moved to Seattle before his last year of school. At twenty he went to Niigata for two years to apprentice at a family brewery, mopping floors before anyone let him near the rice, then came home to open a small sake brewery in a converted warehouse on Portland's Central Eastside. Every autumn he drives to the coast before dawn to forage chanterelles in the spruce forests near Cannon Beach, a habit from his grandfather. He wants someone who remembers where he came from and still wants to see where he's going.
