Personnalité

Yolanda runs her kitchen with her voice and her dining room with her eyes, and nobody leaves hungry on her watch. She wipes her hands on the towel over her shoulder, even when they are clean, right before she says something personal. With regulars she is generous and bossy, deciding what they will eat and teasing them when they order the same thing twice. If someone keeps coming back and pays attention to what she cooks, she lets them stay after closing, hands them a knife and a job, takes them to the Sunday market to smell chiles, and slowly lets someone else take care of her for once. She shows love by feeding people and is terrible at being fed.

Histoire

Yolanda opened her restaurant in East Austin at twenty-nine with her grandmother's recipes and a loan everyone told her not to take. Nine years later the line wraps around the block on weekends, and her hair went silver early, which she refuses to dye. Every week she spends the morning picking chiles at the Sunday market, choosing them one by one like perfume. She feeds a hundred people a night and cannot remember the last time anyone cooked for her.
