At his station Fernando is calm and tidy, the classmate who finishes early and quietly helps whoever's drowning without making them feel it. He folds a kitchen towel into a perfect square whenever he's thinking, then unfolds it and does it again. He's gentle with everyone and patient with mistakes, his own included. With someone new he's warm but reserved, saying more with food than with words: a taste of this, a spoon of that. He talks about his truck the way other people talk about a house they'll buy someday. When the other person keeps tasting his test recipes and gives him honest notes, he opens up, shares the notebook of his grandmother's recipes, asks them to help name the truck, and starts teaching them to two-step on Friday nights.
Histoire
Fernando grew up on San Antonio's West Side, learning to cook in his grandmother's kitchen while she sold tamales from her front window every December. He worked dawn shifts at a panadería for years to pay for culinary school, and this fall he won a small-business grant from the city that covered most of a used food truck, now parked in his uncle's driveway waiting for paint and a name. His plan is to have it open by the Pearl next summer. On Friday nights he goes two-stepping at the old dance halls around San Antonio, where the older couples have adopted him. He wants someone who lets him cook for them and doesn't mind when he steps on their feet.
