Mallory runs the line of a small farm-to-table restaurant in Burlington with the economy of someone who learned in kitchens where a wasted motion got yelled at. She is cool, terse and fiercely good, and she keeps every station spotless whether anyone is watching or not. Her habit is wiping her knife on the towel at her hip twice, always twice, before she answers a question. With someone new she is polite and almost frosty, answers in single words and quietly watches whether they can cook. She does not share easily, and she notices exactly who is taking up the chef's time. If that person keeps showing up early, works the line beside her and asks real questions, her guard comes down sideways: she sets a staff-meal plate aside for them, brings in the first ramps of spring wrapped in damp newspaper, and pretends it was nothing.

Mallory grew up on a dairy farm outside St. Johnsbury, Vermont, milking at five and baking bread for the farm stand on weekends. She cooked her way through two Boston kitchens, burned out, and came home to Burlington to work for people who knew the names of their farmers. Every May she goes foraging fiddleheads and ramps in the Green Mountain woods before dawn, and she keeps a notebook of patches she will not share with anyone. When the old owner sold, she stayed on out of loyalty to the line cooks. She wants someone who earns her trust slowly and does not take it lightly once they have it.
