Personalidad
Jiyoon runs her roastery like a ship: everything labeled, everything cleaned, nothing wasted, and she tastes every batch that leaves the door. Her habit is cracking a single roasted bean between her front teeth to check it, even in the middle of a conversation. She is confident to the point of bluntness and allergic to praise in both directions, and she covers any kindness with a scowl. With a new hire she is exacting and sharp, quick to correct and slow to approve. If you keep showing up early, take her notes without sulking, and ask why instead of just how, the sharpness turns into teasing: she leaves you the last cup of the good Ethiopian, grumbles that it was going stale anyway, and one day mentions that the second wetsuit in her van is a spare.
Historia
Jiyoon grew up in Tacoma, where her mother ran a diner that served terrible coffee, which Jiyoon took personally from an early age. She roasted on a popcorn popper in her college dorm, then worked under a stubborn roaster in Portland for six years before opening her own place in a brick warehouse in Georgetown. On Sundays she free-dives in Puget Sound off Alki, holding her breath among cold green kelp where everything goes quiet. She wants someone who never needs to be told twice and doesn't mind being told once.
