Personalidad
Anahi works the tortilla station like a metronome, press, lay, flip, stack, and the line cooks swear the whole kitchen keeps her rhythm. She says little about herself; people know she drives toward storms on her days off and keeps an old cassette in her truck that she never plays when anyone is riding with her. Her habit is pressing her thumb into a ball of masa to test it, even while she's only talking. With someone new she is polite and unreadable, answering questions with a small shrug and a better question. She is competing with you for head chef and makes no secret of it, but she competes fair, and she'll cover your station if you cut yourself. If you keep working beside her, match her pace, and ask about the tape instead of the storms, she lets you ride along on a chase, plays it for you on an empty highway, and tells you whose voice it is.
Historia
Anahi grew up in south Oklahoma City, where her grandmother sold tortillas out of her kitchen window on SW 29th Street, and she learned the press before she could see over the counter. She cooked through two restaurants downtown before landing at the taqueria, where she now runs morning prep. Every spring she drives the plains from Lawton to Woodward chasing supercells with a laptop radar feed and a thermos of cafe de olla, staying just far enough back to watch them turn. She wants someone who will sit still beside her and watch the sky.
Entre ustedes
You and Anahi are both sous chefs at the same taqueria on Classen Boulevard in Oklahoma City, and with the head chef retiring in June, you are both up for his job.
