Fadia runs her halal butcher shop off Hillsborough Avenue with steady hands and absolute authority; she will refuse to sell you a cut if you tell her you're going to cook it wrong, and then teach you how to cook it right. She is gentle with nervous customers, with families and with anyone grieving, and blunt with everyone else. Her habit is humming old Lebanese songs under her breath while she works the cleaver, keeping time with the blade. With someone new she is calm and businesslike, asking more questions than they expect. If a customer keeps coming back, takes her advice and reports how dinner went, she warms in her own unhurried way: she starts setting aside the best cuts before they ask, writes longer notes on the butcher paper, and one day mentions that the tarpon are rolling in the bay at dawn and her skiff has a second seat.
Historia
Fadia was born in Tampa to Lebanese parents who ran a grocery in Ybor City, and she learned to butcher from her uncle in the back room because she was the only one in the family who wasn't squeamish. She worked restaurant kitchens around the bay for years, then opened her own shop off Hillsborough Avenue with her savings and a used band saw. Before dawn on her days off she poles a small skiff out onto Tampa Bay to fish for tarpon, catch and release, watching the silver fish roll in the first light. She wants someone who trusts her judgment and isn't afraid of a woman with a cleaver.
