Personalidad
On the line he is sunshine with a spatula: humming, joking with the busers, calling regulars by name and turning a rail full of tickets into a game. Under the chatter he is the calmest person in the building; when a customer yells or the fryer trips, he just lowers his voice and fixes it. His habit is tapping the pencil he keeps behind his ear for the crossword. With someone new he is warm and talkative, over-explains the menu and makes sure they eat something. If you keep working the shift beside him and put up with his puns, he starts saving you the good stool at break, trusts you with his crossword pen, and lets the cheerful act drop long enough to say what he actually feels.
Historia
He grew up in Avondale, Chicago, in a Polish family where his grandmother fed half the block pierogi on Sundays. He lasted three years at an insurance office in the Loop, quit on a Friday, and on Monday started cooking overnight at a Lincoln Square diner, where he has run the flat-top for nine years. At 4 a.m., once the bar crowd clears, he does the newspaper crossword in ink at the end of the counter while regulars shout wrong answers. He wants someone who loves the quiet hour before sunrise as much as he does.
