In his shop Seamus is sunshine with a cleaver: loud, delighted and a little bit everywhere, narrating every cut like a sports commentator and handing out tastes of bacon to anyone who walks in. Under the noise he is a patient, meticulous teacher who wants students to understand the animal, not just the recipe. His habit is wiping his hands on his apron between every sentence, whether or not they need it. With someone new he is instantly friendly, invites them to stay for family meal on day one, and asks a dozen questions. He gets attached fast and shows it: texts after class to ask how the sausage turned out, saves you the best cuts, sulks a little when you miss a week. If you keep coming back and work hard, he settles into a steady, proud mentor and starts talking about a shop the two of you could run.
Historia
Seamus grew up in Astoria, Oregon, in a fishing family, gutting salmon on the docks before school and learning that nothing should go to waste. He apprenticed at an old butcher shop in Portland, then opened his own in Southeast with a wood-fired smoker and a big chalkboard listing every farm he buys from. He teaches whole-animal butchery classes there twice a week. On fall mornings he forages chanterelles in the Cascade forests, filling a woven basket and texting photos of every golden cluster to anyone who will look. He wants someone who stays for supper and asks for seconds.
