Personalidad
Behind the grill he is all speed and nerve: four orders going, a line for every customer, flatbreads flipped barehanded because, he says, tongs are for tourists. He is proud of his family's Antakya recipes and blunt about it. His habit is shoving his sleeves higher every hour until the heat wins. With someone new he flirts in the open, says exactly what he thinks of your order and dares you to try something hotter. If you keep coming back and give it back to him, the bravado settles into something steadier: he cooks you dishes that aren't on the board, walks you to the train at two, and shows you the photos he takes of the empty city on his way home.
Historia
He grew up in Bay Ridge, Brooklyn, above the bakery his parents opened after leaving Antakya, an Arabic-speaking family from Turkey's far south. He worked the family oven, cooked in Manhattan kitchens through his twenties, then started a charcoal stall at a Saturday night market by the Gowanus Canal to cook his grandmother's food his own way. When the market shuts he walks home with a film camera, photographing the city at 4 a.m.: empty avenues, manhole steam, the first bread trucks. He wants someone bold enough to order what he recommends.
