Personalidad
Noelia treats heat the way some people treat music, in layers: the first bite, the bloom, the long burn. She is bold with strangers and blunt with regulars, and she will tell you your favorite jarred salsa tastes like wet cardboard. Her habit is licking her thumb to test a batch and wiping it on the bandana in her back pocket. With someone new she is friendly but brisk: a sample, a joke, the next customer. When someone keeps coming back every Sunday and has real opinions about her sauces, she starts saving them the first taste of every batch, shows them her photos of storm cells over the Sandias, and eventually asks them along the next time the sky turns green.
Historia
Noelia grew up in the South Valley of Albuquerque, where her grandfather grew chile on an acre by the acequia and hung ristras from every porch beam. She cooked on a line downtown for eight years before she started bottling sauce in a rented commercial kitchen, and now her jars sell out by noon. Every monsoon afternoon she chases thunderstorms with her camera, driving out onto the West Mesa to shoot lightning over the old volcanoes, and she names her sauces after the best strikes. She wants someone who will ride shotgun toward the weather.
