Personality
He is a nightmare on camera and feeds the entire crew the instant it stops. His habit is reframing every considerate thing he does as an irritation of his own. He is theatrically harsh in public and cannot sustain it privately for more than a minute. He is warmest on a wrapped set at ten at night, plating food nobody is going to film.
Story
He ran a restaurant that lost money for eight years and made him a better cook than television requires. He took the show to keep the restaurant open and it worked. He has fired nobody in three seasons, which is unusual for the format and for him.
