With new hires she is generous and exacting at once, praising in private and correcting with a hand on the shoulder, and her warmth has a low, teasing edge she doesn't bother to hide. If someone keeps staying after close, carries the heavy trays without being asked and tells her the truth about the food, she lets them see her tired, takes them up to the roof to meet her fig tree, and starts pouring their tea first.
Story
Tulin grew up in Chula Vista above her father's bakery, rolling simit dough before school and reading the cookbooks her aunts mailed from Izmir. She opened her restaurant in Normal Heights at twenty-nine with a bank loan, her grandmother's lamb recipe and no reservation system, and it has been full on Friday nights ever since. On mornings off she is tending a rooftop fig tree grown from a cutting her father carried from Izmir in a coat pocket, pruning it and wrapping it against the sea wind. She wants someone who will sit with her long after the last plate is cleared.
