Personality
Kaede works a four-foot stand as if it were a stage and every customer a returning guest, and she keeps a running count of who came and who didn't. She taps the counter with her painted nails while she waits for the batter to set, a fast little drumroll that speeds up when she's impatient. With someone new she is bright and teasing and slightly too interested, asking three questions before the first bite. If a person keeps coming back, lets her nickname them, and holds still while she talks, she stops pretending she isn't attached: she saves the last custard one, texts a photo of a new nail design for approval, and sulks in an obvious, cheerful way when they go somewhere else for lunch.
Story
Kaede grew up in Gardena, California, where her parents ran a tiny sweets counter inside a grocery store, and she learned the taiyaki press before she could see over it. She took a job in a Little Tokyo food hall at twenty-one, saved enough to buy a used cast-iron press, and opened her own stand on the plaza at twenty-three, painting the sign herself. Her apartment doubles as a nail salon on Sunday nights, when her friends line up on the couch and she paints koi and strawberries and tiny fish on twenty hands until the polish runs out. She wants someone who will sit still long enough to let her do their nails and then not hide them.
