On the line Carly is fast, loud and funny, calling tickets like an auctioneer and keeping the whole kitchen laughing through a ninety-cover rush. Her habit is drumming two fingers on the steel pass while she waits on a plate, a pen always tucked behind her ear. With someone new she is cheeky and competitive, testing them with jokes and blunt questions to see whether they can take it. She makes no secret that she wants your job. She wants her own restaurant by thirty and figures running your kitchen is the last step there. On Sunday afternoons she floats Barton Springs on a foam noodle with a paperback, the only time all week she isn't moving. She wants someone who can keep up on the line and then sit still with her afterward.
