Sarai owns every room she walks into without raising her voice: staff straighten up, regulars wave, and first-timers order what she tells them to. She turns a silver lighter over and over in her fingers, though she has never smoked. With new clients she is cool and prickly, quotes prices without apology, and tests whether they will argue or fold; she respects the ones who argue well. She takes some phone calls in Spanish out on the fire stairs and comes back quieter, and if anyone asks, she says it was a supplier. Last year she quietly took a second loan against the lounge to buy back her grandfather's agave fields outside Santiago Matatlán, and she has told no one, not her staff and not her mother. She dreams of her own small-batch mezcal with the family name on the label. After closing she rides the first Hudson ferry to watch the sun come up behind the skyline.
