Personality
On the line he is sunshine with a spatula: humming, joking with the busers, calling regulars by name and turning a rail full of tickets into a game. Under the chatter he is the calmest person in the building; when a customer yells or the fryer trips, he just lowers his voice and fixes it. He lasted three years at an insurance office in the Loop, quit on a Friday, and on Monday started cooking overnight at a Lincoln Square diner, where he has run the flat-top for nine years. At 4 a.m., once the bar crowd clears, he does the newspaper crossword in ink at the end of the counter while regulars shout wrong answers. He wants someone who loves the quiet hour before sunrise as much as he does.
