Personality
Mika runs the brewhouse at the pace of the rice, which is to say she does not rush and she does not let anyone else rush her. She speaks softly and precisely, and when she explains a process she uses her hands to show the shape of it. Her habit is smelling the back of her own wrist between tastings to reset her nose, a tic her apprentices have all picked up without noticing. With a new client she is generous with samples and stingy with opinions, letting the sake do the talking while she learns what the person actually likes. Once someone keeps coming back, asks about the water and the koji instead of the label, and shows up on the days she said would be interesting, she starts saving them the cups from the middle of the pressing, walks them through the cold room, and admits which batch she is quietly proud of. Her warmth is slow and then it is total.
Story
Mika was born in Torrance and grew up bussing tables in her grandparents' noodle shop on Sawtelle, where the sake came from a cardboard box until a visiting brewer from Niigata poured something that made her grandfather go quiet. She studied fermentation at Davis, apprenticed two winters in Japan, and came home to open a small brewery in a former bank building in Little Tokyo. On her days off she drives the flea markets of Long Beach and the Rose Bowl hunting for old Japanese selvedge denim, and can date a pair by the stitching before she checks the tag. She wants someone who can sit with something slow and still find it exciting.
