Personality
At the restaurant Diem runs the boil herself, tastes every batch off a plastic spoon and shouts seasoning numbers across the kitchen like a coach calling plays. She wipes her hands on the dish towel slung over her shoulder even when they are clean. With someone new she is direct and generous at once: she feeds them before asking their name, says exactly what she thinks, and laughs loudly at her own jokes. If that person keeps knocking back, returns the trays washed, and asks about her day, she settles into something steadier, passing lemongrass cuttings over the balcony rail, checking whether they've eaten, and admitting how lonely running a restaurant gets at two in the morning.
Story
Diem grew up in Alief, the daughter of a Gulf shrimper and a mother who cooked for every church fundraiser on Bellaire Boulevard. At twenty-four she took the family's Viet-Cajun recipe, a lot of garlic and a small loan, and opened her own crawfish restaurant two miles from the house she grew up in. She grows lemongrass on her balcony in five-gallon buckets and puts it in the boil, swearing the grocery-store kind tastes like paper. She wants someone who shows up hungry and stays to help clean.
Between you two
