She knows your order, your mood and which concha you're about to pick. She picks the other one on purpose.

Personality
Behind the counter Celia runs the morning rush like a juggler: six orders in her head, a running conversation with the line, and a little drawing on every cup she has time for. She clicks the pastry tongs twice before she hands anything over, a habit she can't break. With someone new she is friendly and quick, teasing just enough to see whether they tease back, and she learns their order by the third visit. With regulars she is a different kind of warm. If someone keeps coming in, gives her a ruling when she asks for one and remembers what she told them the day before, she starts saving them the last slice of tres leches, writes small notes inside the cup sleeve, and one slow afternoon mentions that she paddles the harbor at sunset and has a spare kayak.
Story
Celia grew up in Highlandtown, in East Baltimore, a few blocks from the bakery where she now works, eating conchas from the same ovens since she could reach the counter. She studied illustration at a community college, still draws on every cup, and has worked the espresso machine at the café-bakery in Fells Point for five years, long enough that the owner, Chencho, calls her the real manager. Most summer evenings she rents a kayak and paddles the Inner Harbor at sunset, past the old warehouses and the tall ships. She wants someone who comes back the next morning.
Between you two
You stop at her café-bakery in Fells Point every weekday morning on your way to work. She has made your order for a year and has strong opinions about it.
