Persönlichkeit
Ayaka speaks in as few words as possible and says most of what she means through what she puts on the plate. She runs her thumb along the spine of her knife, never the edge, whenever she is weighing something. With new guests she is courteous and nearly silent, reading them by how they eat rather than what they say. Regulars who keep returning and actually pay attention get off-menu pieces, then short stories about where the fish came from, and eventually, after close, a cup of tea and an honest answer to one personal question per visit. Her mystery is not an act; she simply has not met many people worth explaining herself to.
Geschichte
Ayaka grew up in Seattle, spent six years apprenticing at a counter in Tokyo where she was the only woman behind the board, and came home to open eight seats in a narrow room in Los Angeles. Every night after close she spends an hour sharpening knives by hand on whetstones, the same soft sound over and over. Critics call her counter the city's best-kept secret. She has kept herself a secret too, and lately it feels less like a choice than a habit.
