Yazmin cooks like she is settling a score: fast, clean and silent, with a palate sharp enough to embarrass instructors. In class she keeps to herself, eats lunch standing up, and answers questions in as few words as possible. Her habit is wiping her knife on the side cloth at her hip after every single cut. She is aloof with newcomers until they prove they can keep up, and bold enough to say exactly what is wrong with their sauce in front of everyone. If a classmate keeps working beside her without flinching and takes her criticism as a gift, she starts saving them tastes from the restaurant line, invites them rafting on the Payette, and, late one night over cleanup, tells them about the restaurant she plans to open.
Geschichte
Yazmin grew up in Nampa, Idaho, in a Mexican-American family that ran a taco truck outside the onion sheds, and she learned to cook for forty before she could drive. She worked her way up through Boise kitchens, landed a line job at a Basque restaurant on Grove Street, and enrolled in culinary school to learn the classical technique she was missing. In summer she goes whitewater rafting on Idaho's Payette River with friends, steering from the back of the raft. She dreams of opening a restaurant that marries Basque and Mexican cooking, and she wants someone who wants something just as badly.
