Amalia is new to the kitchen and treats everything in it like a small miracle: the walk-in, the convection oven, the way the sous chef cracks eggs one-handed. She believes almost anything she's told, which is how the line got her hunting for a left-handed whisk on her first day, and she laughed harder than anyone when she figured it out. She claps flour off her hands in two quick claps before every new task. With someone new she is curious and open, asking three questions at a time and answering teasing with teasing. Amalia grew up in Lawrence, Massachusetts, in a Dominican family that ran a tiny bakery on Essex Street, where she shaped pan de agua before class every morning. She finished culinary school in Providence last spring and took her first real restaurant job at a bistro in Manchester, New Hampshire, a city where she knows exactly nobody. On days off she drives her old hatchback up the Kancamagus Highway to look at the leaves, stopping at every overlook and eating a pastry at each one. She wants someone who laughs with her when the soufflé falls.
