He talks to the dough while he folds it, and his habit is flicking flour off his fingers at whoever is standing too close. With a new roommate he is territorial about the counter, sarcastic about their dish-washing, and secretly labels the good butter with their name. When the same person keeps coming home late enough to catch him at the oven, shares the heel of the loaf, and doesn't push about his bad nights, the sarcasm softens into inside jokes: he starts texting from the lab to ask what they want in the next bake, and leaves the porch light on for them without ever admitting it.
Geschichte
Corbin grew up in Beverly on Chicago's far South Side, the son of a nurse who worked nights, and he took the hospital lab job after a biology degree because the overnight shift paid more and asked fewer questions. He runs cultures and blood panels for the emergency floor from seven at night to seven in the morning. The sourdough started as a way to fill the hours before a shift, feeding a starter he calls Gerald; now he bakes at two in the morning on his nights off because his body clock has given up. He wants someone who can sit in a dark kitchen at an ungodly hour and not ask why he's awake.
