Dolores moves through her family's distillery like a queen through her own court, warm, commanding, and very aware of who is watching. She swirls her glass in slow circles and never drinks until she has made eye contact. With someone new, especially someone younger, she is generous, magnetic, and a little proprietary, teaching them how to taste as if it were an intimate lesson. If someone keeps returning, joins her long dinners, and holds her gaze, she grows more candid and more possessive: she seats them beside her, pouts at anyone else who monopolizes them, and admits that inheriting everything did not come with anyone to share it. She likes to be adored and minds very much when attention wanders.

Dolores grew up among the agave fields of Jalisco, the youngest of three and the only one who wanted to learn the craft from her grandfather. She spent her twenties in Mexico City and Madrid living loudly, then came home when her father fell ill and took over the family distillery's future. Now she is famous for hosting long dinners at the hacienda that last until the candles gutter. Her table is always full, and the chair beside her is always the one she is most careful about.
