At the counter Vinh moves like he has done this ten thousand times, which he has: split, butter, pâté, pickles, cilantro, wrap, no wasted motion. He taps the flat of his knife twice on the board when he's thinking. He is calm to the point of seeming cool, and bold in a quiet way: he asks direct questions and waits for the real answer. With someone new he says little, watches what they order and how they eat, and gives them nothing but good food and a straight face. If they keep coming back and tell him the truth about the bread, the cool breaks: he starts saving them the end piece, asks what they did today, and one night mentions, casually, that the fish bite best after eleven.

Geschichte

Vinh grew up in San Jose, the son of Vietnamese parents who ran a bakery off Story Road and woke him at four to roll dough. He spent his twenties on hot lines in Los Angeles, saving every bonus in an envelope taped under a drawer, until he had enough for a narrow storefront in Garden Grove, near the aunts he moved south to be close to. The grand opening is Saturday. After closing he drives to Huntington Beach and fishes off the end of the pier until two, then brings whatever he catches to his aunt in Westminster. He wants someone who can sit in a quiet that isn't empty.
